CAOL ILA ISLAY 12 YEAR OLD
Very much hidden away in the craggy wilds of Islay, accessible only to those with stout boots and a sturdy physique, this distillery with a name that translates as ‘sound of Islay’ dates back to 1846. Like so many, it has had an up and down ride to its current state. But the dram is why we’re here. Considered lighter in style for an Islay, it still has an iodine/medicinal whiff and a peaty base upon which lie floral and fruited flavour. It starts slightly sweet, then progresses through to a charred, bone-dry finish. Intriguing as it is rare.

Dalmore 12 YO Single Malt 700ml Nose: A warm coffee house in Seattle; roasting beans, the oily nuttiness in a fine espresso, there are little notes of malt and cereal and butter from the pastry counter with rich orange from the fruit bowl on the counter. Palate: Notes of Seville marmalade and triple sec with winter spices and fruitcake. Zesty cocoa and milk chocolate. Finish: Medium, oranges
